25 Days of Cookies - Day 17

My husband loves pineapples - especially the super sweet ones that you can only get in Taiwan; they even beat the ones from the Dole Plantation in Hawaii. You would see pineapple stands all over the streets in Tainan. It's so convenient that they would cut them up for you in seconds - it's almost magical. While you can may get lucky with a delicious one from Costco, the ones in the US are never quite as sweet. Today's cookie is a cake like pineapple cookie with pineapple drizzle. Enjoy!
