Lemon Bars

I have been browsing the web endlessly, trying to find recipes that utilize a lot of lemon - hopefully both the skin and the juice. Since lemon cookies didn't go too well with the guinea pigs at husband's work, I gave lemon bars a try. For some reason, I sadly lost a lot of the crust (super buttery taste) while trying to scoop the pieces out of the pan.

 Hmm...what to do with the 100 or so lemons left on the tree....
